The soil consists of porphyritic sand of volcanic origin. Orange in color and with low pH, contributing to the wine's slender style and minerality. The yield is low, only 35 quintals per hectare.\u003c\/p\u003e\u003cp\u003eVinification occurs without temperature control, using pumpovers and délestage - a method where the fermenting must is drained and poured back over the skins for gentle extraction and aeration.
