The taste is both energetic and deep with excellent concentration, lively acidity, and a long mineral finish, where freshness and texture balance beautifully.\u003c\/p\u003e\u003cp\u003eThis wine pairs particularly well with dishes of fish and seafood, but also with delicious light meat chops from the grill, where the wine's structure and minerality have the space to unfold.\u003c\/p\u003e\u003cp\u003eThe vineyard is situated about 350 meters above sea level on the Anaga massif, which is one of Tenerife's oldest geological areas with volcanic soils. In several places, traces can be found going back up to eleven million years. Here, the subsoil is rich in silt, clay, and volcanic stones, providing good drainage and forcing the roots deep down. The vines are planted on their own roots, many of them of significant age, and are cultivated sustainably without the use of synthetic pesticides or herbicides.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested at the beginning of September and immediately cooled upon arrival at the cellar to preserve freshness. Fermentation occurs spontaneously with the grapes' own yeast cells in a concrete tank, after which the wine is aged for five months in French barrels.
