Montemercurio's grappa is distilled from the lees from their Vino Nobile wines. After a gentle pressing, it is distilled over a water bath, and the distillate is now stored for 10-12 months in small oak casks, which were previously used to store Montemercurio's Vin Santo "1986".
The result is a grappa with a nice amber color, with hints of orange. The aroma is ripe fruit, honey, tobacco and cocoa. The taste is very persistent with a sweet finish supported by a soft, almost velvety, alcohol.
The grappa is bottled without filtration and is left in the bottle for three months before being released.

This isn't a wine, but a grappa distilled from the pressing residue of Vino Nobile and aged in old Vin Santo casks. It has a soft, velvety alcohol and a sweet finish with notes of ripe fruit, honey, tobacco and cocoa, so it works best as the conclusion to a meal rather than with the food itself. Serve it at room temperature with coffee and let its sweetness and warmth play against the coffee's bitterness, a strong hard cheese or a lightly spiced dessert. Steer clear of overly delicate dishes, as the spirit will otherwise steal the show.
