Ermes Pavese Le Sette Scalinate Blanc de Morgex et de La Salle DOC 2019 1.5L
Le Sette Scalinate is named after the Pavese family's first vineyard, which is planted on seven levels connected by stairs for approx. 1,200 meters altitude. It is Europe's highest vineyard.
The vines on this field are over 80 years old, and of course the Prié Blanc grapes for La Sette Scalinate only come from this field. It is harvested by hand in the last week of September or the first week of October.
The whole de-stemmed grapes are pressed by hand and soaked in cold water for 48 hours before undergoing a gentle pressing, and vinification is carried out in stainless steel tanks at a controlled temperature and with frequent pumping. The wine is filtered before bottling. It is aged a year longer than Pavese's base Blanc de Morgex et de La Salle.
The wine appears clear and pale yellow with golden reflections. The nose is very aromatic with hints of citrus. The taste is fresh and intense, but at the same time has a beautiful fatness about it. A complex and aromatic wine.
Very small production exclusively in magnum bottles. A wine to be tasted!
