Wine from Morgex at the foot of Mont Blanc – prié blanc at extreme altitude
Ermes Pavese is a small family-owned winery rooted in Morgex in Valle d’Aosta, right at the foot of Mont Blanc. Here, the family continues to work closely together on wine production, with all stages - from vineyard work to vinification - personally overseen by Ermes himself.
The production is small, handcrafted, and deeply rooted in the area's extreme natural conditions. Morgex is considered one of Europe's highest wine regions and produces wines that stand out significantly from most others in Italy.
La Ruine and the vineyards at altitude
The winery is based in the small village of La Ruine, where the family's vineyards are also located. Here you will find, among other things, the parcels dedicated to the dessert wine Nivine, made from overripe grapes.
Ermes Pavese owns about three hectares of vineyards, spread over many small and fragmented parcels. The land is partly owned and partly leased. The vineyards are situated at altitudes between approximately 900 and 1,200 meters above sea level, providing a cool, dry climate with large temperature differences between day and night.
The high altitude naturally reduces the risk of diseases and pests and allows for very long growing seasons with slow ripening.
Prié blanc - ungrafted vines
One of the most remarkable features of Ermes Pavese's wines is the work with the prié blanc grape. Here, the vines grow on their own roots and are not grafted onto American rootstocks, which is otherwise standard in European viticulture.
The reason is simple: the vine louse (phylloxera) does not survive at these altitudes. This makes Morgex one of the very few places in Europe where one can still work with ungrafted vines – providing a rare insight into the grape's original expression.
Vinification and style
The work in both the vineyard and the cellar is characterized by minimal intervention and great respect for the raw material. The wines appear taut, precise, and extremely mineral with low alcohol, high tension, and an almost crystalline clarity.
These are wines where freshness, structure, and origin take precedence over body and extraction.
International recognition
Ermes Pavese's wines have gained increasing international attention in recent years. Most recently, Ermes Pavese Blanc de Morgex et de la Salle 2023 was highlighted by The New York Times as one of The Most Memorable Wines of 2025.
