Domaine Bitouzet-Prieur has deep roots in Burgundy and works today with a clear focus on place, plots, and consistent craftsmanship. The Bitouzet family's connection to the area can be traced back to the early 1800s, when Vincent Bitouzet's great-great-grandfather settled in Auxey-Duresses. In 1804, the Bitouzet family established themselves in Volnay and were among the first in the area to bottle their wines themselves.

Annie Prieur, Vincent's wife, also comes from a wine-producing family, and the shared heritage from Bitouzet and Prieur has created an estate with both breadth and depth. Today, Vincent works alongside his son François Bitouzet, who represents the next generation and is deeply involved in both vineyard and cellar work.

Vineyards and estate

Domaine Bitouzet-Prieur has about 12 hectares of vineyards, of which approximately 4 hectares are planted with chardonnay and the remaining 8 hectares with pinot noir. The estate has plots on some of the most renowned vineyards in Volnay and Meursault.

In Meursault, they work with vineyards such as Les Corbins and Clos du Cromin, as well as Premier Cru plots Charmes, Perrières, and Santenots. In Volnay, the holdings include a number of highly classified Premier Crus, including Les Aussy, Taillepieds, Clos des Chênes, Pitures, and Caillerets.

Additionally, the estate produces Bourgogne Blanc, Bourgogne Rouge, and Bourgogne Passetoutgrains, where the same approach to vineyard work and vinification is followed.

Cultivation and organic practices

The work in the vineyards is central at Bitouzet-Prieur. The estate was organically certified in 2013, and neither herbicides nor pesticides are used. Organic compost is used when needed, and the use of copper sulfate is kept at a very low level.

The goal is to maintain the soil's natural balance and ensure healthy vines that can express the plots as precisely as possible.

Work in the cellar

Vinification follows classic Burgundy principles with a focus on transparency and balance. Only natural yeast strains are used.

The white wines are fermented and aged in barrels with significant contact with the lees, contributing to depth and complexity without detracting from freshness and structure. The red wines undergo a short cold soak followed by fermentation at relatively high temperatures, providing structure and aromatic clarity.
