This Burgundy Pinot Noir has a medium body, moderate tannins, and a fresh acidity that yields juicy red berries and a discreet touch of oak. The best way in is to match the intensity: poultry, veal, and dishes with earthy and mushroom notes meet the wine's elegant fruit without overpowering it. The fresh acidity also makes it ideal for rich elements like duck breast and charcuterie, where it cuts through the fattiness, while the moderate tannins pair beautifully with aged sheep's and cow's milk cheeses and dishes graced with truffle.
