A new generation in Burgundy with deep roots

Arnaud Baillot is a young and ambitious winemaker who has quickly established himself as one of the most interesting new names in Burgundy. With the purchase of the first vineyard in 2017, he - together with his wife Laure - began building Domaine Arnaud Baillot in Beaune, right in the heart of Côte de Beaune.

The couple shares a deep passion for Burgundy's terroir and the great variety the area offers. Laure also contributes solid experience and deep roots in the region - her family is behind the legendary Domaine Hudelot-Noëllat, providing a natural link between tradition and innovation.

Background and development

After Arnaud completed his master's degree in wine trade and marketing, the couple has worked purposefully and ambitiously to create their own domaine. Today, they manage about 7.5 hectares of vineyards, which are cultivated organically with a focus on biodiversity and respect for nature.

The work in the vineyard is characterized by precision and thoughtfulness, and each parcel is treated individually to express its specific terroir as clearly as possible.

Vineyards and appellations

The vineyards span a range of prestigious appellations in both Côte de Beaune and Côte de Nuits. Among others, Arnaud Baillot works with parcels in Meursault, Pommard, Volnay, and Hautes-Côtes de Beaune, supplemented by carefully selected grapes from Côte de Nuits, including Gevrey-Chambertin, Chambolle-Musigny, and Vosne-Romanée.

The range of appellations allows for wines that move from the immediate and elegant to the more complex and structured - always with a clear imprint of origin and vintage.

Work in the cellar

Arnaud Baillot is known for his uncompromising approach to quality. Every detail in the process – from vineyard work to vinification and barrel aging – is under careful control. Gentle extraction, precise vinification, and a well-balanced use of barrels are employed, never allowing them to overpower the wine's natural expression.

The couple also experiments with modern techniques, including the use of concrete tanks for aging, which contributes to the wine's purity, energy, and precision. The approach is curious and reflective, and the results have quickly put the domaine on the wine world's radar.

New winery in Beaune

In 2023, Arnaud and Laure achieved an important milestone with the construction of a new, modern winery in Beaune. With an investment of around two million euros, they have created an advanced production facility with a cellar, tasting room, and offices, supporting their ambition to work even more precisely and long-term.

The new winery marks the culmination of several years of focused work and significantly strengthens the domaine's position in Burgundy.

Style and recognition

The wines from Domaine Arnaud Baillot range from regional appellations to prestigious Premier Cru and Grand Cru wines. Common to them all is a clear respect for Burgundy's terroir and a desire to express this as purely and elegantly as possible.

The style is modern but rooted in classic Burgundy: wines with finesse, freshness, and structure, which develop beautifully both in the glass and with aging.

Arnaud collaborates with Vincent Dancer, and both are considered among the most exciting young producers in Burgundy today. In Decanter's report for the 2023 vintage, Charles Curtis MW mentions Arnaud Baillot among his “Top 10 up-and-coming producers,” particularly highlighting Volnay 1er Cru Mitans for its elegance, depth, and balance.
