About the wine
Pinot noir from the "Les Rouards" vineyard near Pommard is a beautiful example of Burgundy's finesse.
The wine opens with a vibrant aroma of red berries and cherries, which with age develops into deeper, spicy, and balsamic notes.
The taste is structured but without sharp edges, and the aftertaste is marked by juicy, ripe cherry.
The grapes are manually harvested from organically cultivated vineyards, where each parcel is closely monitored to ensure optimal ripeness. 30% of the clusters are vinified whole, and fermentation occurs without the addition of sulfur in stainless steel tanks. No punch-downs, but gentle pumping over twice daily until the end of fermentation. Subsequently, the wine is matured for 15 months in Burgundy oak barrels, 10% of which are new, adding depth and finesse without dominating the fruit.
With its balance between freshness and complexity, the wine is ideal as an aperitif. It can be enjoyed young for its fresh fruit or stored for 5-8 years, where it will develop greater depth and complexity.
