This Volnay is silky-smooth with fine, moderate tannins, fresh acidity and delicate red berries, and it prefers dishes that match its finesse rather than overpowering it. The soft tannins and medium body suit lean to medium-fat meats such as poultry and veal, while the underlying forest-floor and mineral note plays beautifully with mushrooms. The acidity cuts nicely through a bit of richness without demanding powerful tannin, and as one of the most cheese-friendly red grapes, it also thrives with softer cheeses, where the cheese's fat rounds off the tannins. Keep the accompaniments understated and ideally with a touch of red berries, so the wine's elegance has room to shine.

About the wine

Elegant and silky smooth Volnay with finesse and depth

The epitome of refinement from one of Burgundy's most acclaimed appellations. The wine offers a seductive aroma of red cherries, raspberries, and dried rose petals, complemented by subtle spices and a discreet forest floor note. On the palate, it is silky with fine tannins, delicate red berries, and an underlying minerality that provides impressive balance and length.

The grapes hail from the 1er Cru vineyard "Mitans," situated on Volnay's characteristic slopes with calcareous and stony soil. The vines here benefit from perfect exposure and careful tending, resulting in small, concentrated grapes of great complexity.

After hand harvesting and selection, the grapes ferment traditionally in open vats before aging 12-14 months in French oak barrels, some of which are new. This gives the wine structure and subtle depth without overwhelming its elegant fruit character.

Volnay 1er Cru "Mitans" should be served at around 14-16 degrees Celsius and will develop beautifully over the next 10-15 years.

A wine that showcases Arnaud Baillot's dedication to quality and the distinctiveness of the terroir.
