This Volnay is a classic Pinot Noir with medium body, moderate and precise tannins and a fresh acidity that makes it incredibly versatile at the table. This excellent location is known for its intense mineral wines; Unfortunately, Bitouzets only has enough to make barely three dishes.
The scent is slightly oaky at the moment, but will absorb the wood over time; there is definite fruit and the stony, precise tannins to carry this.
