This Volnay is a classic Pinot Noir with a full yet elegant structure, moderate tannins and a fresh acidity that balances the dense red fruit. The moderate tannin and soft texture follow light to medium-bodied proteins without overpowering them, while the acidity cuts through richness and refreshes the palate. The spicy hint of oak and the earthy, terroir-driven character play beautifully with mushrooms, truffle and ripe cheeses, and like most Pinot Noir it is especially friendly toward cheese thanks to its low tannins. Choose preparations with juiciness and a bit of richness rather than the very boldest, grilled dishes, so wine and food become equal partners.

About the wine
Bitouzet-Prieur has 2.21 hectares spread over Echards, Aussy and Petits Gamets, all on the same site to the south-east of the village. The nose has a touch of spicy oak, which initially opens up to a beautiful, flowery character and sweet red berries. In the mouth it is full, a product of the deep soil, with a balance of acidity, juiciness and dense red fruit. A straightforward and appetizing Volnay.

The 2020 Volnay Village has a backward nose at first, opening with touches of black pepper and sous-bois, just a tiny bit of reduction. The palate is medium-bodied with a lightly spiced opening, quite fleshy on the mid-palate with strawberry, raspberry and a pinch of white pepper on the finish. Fine, probably early drinking.
