This Volnay is an elegant and slender Pinot Noir with stony, precise tannins, fine fruit and a touch of oak that hasn't yet fully melded together. Its soft, moderate tannins make it one of the most food- and cheese-friendly red grapes, and it can handle richness without coming across as too heavy. Stick to dishes with moderate fat and an earthy or subtly gamey tone, so the wine's mineral precision and red fruit have room to unfold.

About the wine
This excellent location is known for its intense mineral wines; Unfortunately, Bitouzets only has enough to make barely three dishes. The nose is slightly oaky at the moment, but will absorb the wood over time; there is definite fruit and the stony, precise tannins to carry this.
