This Volnay is full-bodied and intense with dark cherry, plum and earthy notes, yet kept elegant by the soft tannin structure and fresh acidity so typical of Pinot Noir. The moderate tannins and medium body make it a dream with rich, but not too powerful, proteins, where the fruit and acidity cut through the fattiness without overpowering the dish. The earthy notes play beautifully against grounded and umami-rich ingredients like mushrooms, truffle and aged cheeses, while the low tannin compared to other red wines makes it exceptional with cheese.
