Volnay from a great vintage here has both body and a firm yet elegant tannin structure that carries the dark cherry, plum, and earthy tones. The firm tannin needs a bit of richness to play against, so you get the best balance with juicy poultry, pork, and braised dishes, where the meat's fat softens the tannin while the wine cuts through the richness. The earthy, mineral notes fall nicely into step with mushrooms and aged cheeses, and Pinot Noir, considered as a red wine, is one of the most cheese-friendly thanks to its moderate tannin. Think in terms of medium to full body in the food, so that wine and dish meet each other as equal partners.

About the wine
The grapes are harvested manually and sorted at the winery so that only those showing signs of perfect ripeness make it into the wine. The wine is aged in French oak barrels for a period of 12 to 16 months. A full-bodied and powerful wine, displaying dark cherry, plum, and earthy characters supported by a firm tannin structure that will benefit from time in the cellar. An intense and very elegant wine from a fantastic vintage.

The delicious and intense bigger-bodied flavors also possess evident minerality and focused power that seems to build from the mid-palate to the impressively lengthy finale where the only reproach is a touch of warmth.
