This Volnay is a classic Burgundy with a medium body, moderate, stony tannins and a fresh acidity that makes it very versatile at the table. The soft tannins and the earthy, mineral character suit poultry and light meat with mushrooms and truffle, where the wine's umami plays up against the dish's own deep notes. The acidity cuts nicely through richness, and because Pinot Noir is the most cheese-loving of the reds, it works beautifully with semi-firm sheep's and cow's milk cheeses. Serve it at 16-17 degrees, so the fruit and the precise tannins come into their own.

About the wine
This excellent location is known for its intense mineral wines; Unfortunately, Bitouzets only has enough to make barely three dishes. The nose is a little marked by own at the moment, but will absorb the wood in time; there is definite fruit and the stony, precise tannins to carry this.

The 2020 Volnay Les Caillerets 1er Cru has a generous nose with red cherries and crushed strawberry aromas, nicely defined though maybe the Taillepieds has a touch more complexity. The palate is medium-bodied with fine tannins, plenty of red fruit with a precise and lightly spiced finish. This is very expressive and I can see it ageing with style. Excellent.
