Ståltank (stainless steel tank)
A ståltank is a container made of stainless steel that winemakers use to ferment and store wine. Today, stainless steel is the most widely used material for fermentation, and there are good reasons for that: the steel is strong and durable, it does not rust, it is easy to keep clean, and it conducts heat quickly. That last point matters, because many tanks have a double wall through which a coolant can be circulated, allowing the temperature to be controlled very precisely during fermentation. Unlike an oak barrel, the steel adds neither flavour, tannin nor oxygen to the wine.
That is precisely why a stainless steel tank matters for what you experience in the glass. Because the tank is flavour-neutral and keeps oxygen out, it preserves the wine's fresh, clean fruit and the grape's own character. This is why many white wines and light, fruity red wines are fermented and aged in steel: the result is typically crisp, precise and youthful rather than the soft vanilla and spice notes a barrel can give.
A common misconception is that steel is the simple or cheap option. In reality, it is a deliberate choice of style. If the label says the wine is made entirely in steel, you can expect a clean, fresh taste without any oak character.
