Classic Savagnin from Jura with freshness, depth, and character.
This Côte du Jura is made from 100% Savagnin from the southern part of Jura. The vines are on average 45 years old and are cultivated using sustainable principles, focusing on low yields and optimal ripeness in each parcel.
In the glass, the wine appears light and elegant. The aroma offers notes of golden apples, lemon, almond, and a subtle hint of dried herbs and forest floor. The taste opens fresh and precise with a lively acidity, gradually replaced by a more round and full-bodied texture, where ripe apples are accompanied by a fine salty minerality and the characteristic nutty nuances that Savagnin is known for.
An ideal companion to mature cheeses, poultry, mushroom dishes, or fish with butter-based sauces. The wine can be enjoyed young for its freshness but will develop further complexity over the next 5-8 years.
The grapes come from limestone soils around Rotalier, where the old vines contribute concentration and complexity. The combination of Jura's cool climate and Savagnin's naturally high acidity produces wines with both vibrancy and aging potential.
The grapes are harvested manually and carefully sorted. Fermentation occurs spontaneously without the addition of sulfur, and the wine is then aged for 12 months in oak barrels, 10% of which are new. The wine is bottled without filtration to maintain as much character and texture as possible.
