Carricante grapes from the eastern slope of Etna - Contrada Volpare - Milo at 700m above sea level.
Sandy volcanic soil rich in both organic matter and minerals. Grows on small terraces surrounded by old lava stones.
Harvested in mid-October and immediately underwent a process of cryomaceration for three hours, followed by direct pressing.
The must is then clarified at low temperature. Fermented and aged on the lees for 8 months. 90% in steel and 10% in French oak barrels.
Minimal use of sulfur and copper.
The aroma is tonic and citrus with a hint of mint and chamomile.
The taste is deliciously mineral, really creamy and silky in texture. The finest fruit and a hint of almond beautifully enveloped in fresh acidity. The aftertaste offers delightful salinity and continues for a long time!
The fine acidity is definitely a good indicator that this is a wine with a long life.
