This Carricante from Etna's volcanic soil has high, fresh acidity, a creamy and silky-smooth texture and a distinct minerality with notes of citrus, green apples, pear and peach. The fresh acidity cuts through richness and oil, while the soft texture and light oak aging give enough body for slightly fuller fish and shellfish. Choose elegant dishes with sea flavors, citrus and fresh herbs, where the wine can play along on acidity, minerality and a lightly creamy mouthfeel without being drowned out.

About the wine

From a single vineyard at 700m above sea level, with a southern exposure in front of the forest in Contrada Volpare - Milo

The aroma is super mineral with notes of both peach, green melon, and sage.

The taste is wonderfully complex with minerality and fruit. A very fine creamy and silky texture. Both citrus, green apples, and pears. An insanely long and beautiful aftertaste.

A wine that brings to mind the great premier cru Burgundy white wines! It is super elegant!

Sandy volcanic soil rich in organic matter and minerals.

The Carricante grapes are harvested in mid-October and then immediately undergo a process of cryomaceration for six hours followed by direct pressing. The must is clarified at a low temperature and then fermented and aged on the lees distributed with 10% in stainless steel tanks and 90% in French oak barrels for 8 months.
