From a single plot at 700m above sea level, with southern exposure in front of the forest in Contrada Volpare - Milo. Sandy volcanic soil rich in organic matter and minerals. The Carricante grapes are harvested in mid-October and immediately undergo a process of cryomaceration for six hours, followed by direct pressing. The must is clarified at a low temperature and then fermented and aged on lees, with 10% in steel tanks and 90% in French oak barrels for 8 months. The aroma is super mineral with notes of peach, green melon, and sage. The taste is wonderfully complex with minerality and fruit. A very fine creamy and silky texture. Both citrus, green apples, and pears. An insanely long and beautiful aftertaste. A wine that brings to mind the great premier cru Burgundy white wines! It is super elegant!
