This Sangiovese is lean and juicy with plenty of fruit, fresh acidity and only moderate tannins, and that makes it both drinkable and flexible at the table. The fresh acidity cuts nicely through fat and salt, while the soft tannins settle gently around lighter meat dishes without drying out the mouth. Keep the dishes medium-bodied and fruit-friendly, so the wine gets to play along instead of being run over by heavy sauces.

About the wine

Attenti al Lupo is 100% Sangiovese. The Sangiovese grapes are harvested slightly earlier, and fermentation is carried out in a way that is certainly not typical in the area; it takes place on whole clusters, combined with carbonic maceration. (carbon dioxide)
The goal is to showcase the young Sangiovese, full of energy and life, with plenty of juicy acidity.

This wine presents a "raw" version of very tasty Sangiovese! Plenty of fruit in both aroma and taste - (characteristic of carbonic maceration).

It is slender and upright in the mouth with very good drinkability. Beautiful minerality and balance to the acidity. Nice aftertaste that lingers well.

Harvested in the first week of September 2022.
The grapes are fermented on whole clusters with 10 days of carbonic maceration in a sealed steel tank. The wine then ages in cement and steel for 12 months.

Critic reviews

Medium shiny ruby red with a slightly brightening rim. Initially somewhat reductive on the nose, then wild berries, cherries and dark chocolate, paired with spicy aromas. Very fresh on the palate, with gripping, somewhat rustic tannins, refreshingly impetuous.
