This Brunello has finesse with high-quality tannins and a well-balanced acidity, and it is precisely that combination which calls for dishes with richness and structure. The tannins are softened by fatty proteins from beef and lamb, while the acidity cuts through the fat and keeps the palate fresh. The wine's dark berry fruit and elegant, medium-bodied frame match dishes prepared by roasting and braising without overpowering them, and mature, ripe tannins also handle a little salt from charcuterie and hard cheese. About the wine

Cielo d'Ulisse is favored by the "fresh climate" on the western side of Montalcino. Here, the vineyards are surrounded by forest and river, allowing them to better withstand heat. This results in a dynamic wine with great drinkability and not too much sweetness.

The color is deep dark red. The aroma is wonderfully robust with small dark red berries and fruits, with blackberries being particularly prominent.

The taste is full of finesse with high-quality tannins supporting a well-balanced acidity. It's delightfully dynamic, light without being sweet. The structure and texture clearly indicate that the wine has great aging potential.

The balance is elegant, and the taste is full of finesse. A wine that drinks really well.

Fermentation in large open vats for 40 days, with the first 80% of fermentation carried out with open pump overs, while the remaining 20% of fermentation is done in the Piedmontese style (infusion). Aged for 28 months in oak barrels and 14 months in cement.
