Laure Baillot-Van Canneyt is based in Pommard, right in the heart of Côte de Beaune, where some of Burgundy's most structured and terroir-driven wines are created.
The family has deep roots in the area, with a history that is closely interwoven with some of the region's most respected names.
Laure is the sister of Charles Van Canneyt, who today is behind the wines at Arnoux-Lachaux, and she is also the granddaughter of the traditional Domaine Hudelot-Noëllat.
Add to that, she is married to Arnaud Baillot - in other words, it's a family where wine is not just a craft but a way of life, and the level is exceptionally high.
Her own domaine is small and focused, with parcels around Pommard and in Hautes-Côtes de Beaune.
Here, she works organically in the vineyard with great respect for the old vines, many of which are 70 to 90 years old.
The soil is classically calcareous with inclusions of clay, which results in wines with both structure, depth, and a cool, precise minerality.
In the cellar, the approach is simple and uncompromising. Fermentation takes place with whole clusters, which adds energy, structure, and aromatic complexity.
The most striking choice is the aging in glass, in so-called "glass globes," where the wines mature for up to 24 months without the influence of wood.
This provides an extremely pure and transparent expression, where fruit, terroir, and structure are crystal clear without filtration from barrels.
The result is wines with a rare combination of finesse and intensity.
They appear precise, vibrant, and with an almost crystalline clarity that is rarely experienced in Burgundy and clearly reflects both their strong heritage and Laura's own style.
