This crisp blanc de blancs has high acidity, fine bubbles and a saline, mineral finish that nearly begs for the best of the sea. The bubbles and acidity cut through richness and cleanse the palate, while the wine's tropical fruit and citrus play together with fresh, clean flavors from shellfish and raw fish. Its light body and noble bitterness make it an elegant partner for delicate dishes, where you don't want to overpower either wine or food. Try it also with creamy, fresh cheeses, where the acidity balances the lactic richness.

About the wine
Nice Champagne of 50% Pinot Blanc and 50% Chardonnay. The champagne is crisp and balanced, and a lovely blanc de blancs expression from Les Riceys. The production of the wine is true to the grapes and the soil in the area. An expressive wine that is produced with minimal processing. The wine has an intense fruit character with great complexity and balance as well as a lovely mineral freshness.
The scent is nice and full of tropical fruits and citrus.
The taste is soft and fine with notes of a noble bitterness. Really nicely structured with a long salty and fresh mineral finish.

Alexandre Bonnet's blanc de blancs is a rare blend of equal amounts of Chardonnay and Pinot Blanc. Originating exclusively from Les Riceys, it is fruit-forward, with plenty of floral fragrance. A melange of white and yellow fruit, baked pear and yellow apple leads the way, with a touch of lime supporting.
