This is not a wine, but a grappa distilled from the pressing residues of Barolo, and it has a powerful alcohol strength of 42 percent. It is classically enjoyed after the meal as a digestif, where its warm, intense character both cuts through richness and rounds things off. You can serve it alongside a plate of ripe, robust cheeses or dark chocolate, where sweetness and bitterness meet the grappa's full-bodied structure, and it also works well with a small handful of roasted nuts or dried fruit beside your coffee. Serve it at cool room temperature, so the floral and spicy notes from Nebbiolo are allowed to unfold.
