This Brunello has finesse, high-quality tannins and a well-balanced acidity, without being heavy or sweet. That makes it a classic companion to rich meat and dishes with a bit of fattiness, where the tannins are softened and the texture falls into place. At the same time, the acidity keeps the balance against umami-rich and slightly salty dishes, while the dark berry fruit plays up to mushrooms and mature cheeses. Do choose dishes prepared by braising or grilling, so the wine's structure and body match the weight of the food.

About the wine

Cielo d'Ulisse benefits from the “fresh climate” on the western side of Montalcino. Here, the fields are surrounded by forest and river and can therefore withstand the heat better. This creates a dynamic wine with great drinkability and without too much sweetness. The balance is elegant and the taste has plenty of finesse.

Fermentation in large open vats for 40 days, the first 80% of the fermentation is carried out together with open pump overs, while the remaining 20% ​​of the fermentation is carried out according to Piedmontese style (infusion)

28 months aging in oak casks and 14 months in cement.

The color is deep dark red. The aroma is nice and big with small dark red berries and fruits, especially blackberries stand out.

The taste has plenty of finesse with high-quality tannins that support a well-balanced acidity. Nicely dynamic, light without being sweet.

The structure and texture give a clear indication that the wine has great aging potential.

Her er røde, bitre bær i fokus forenet med en elegant kalket signatur. Den oser af viol, tørrede rosenblade, medicinskab, kvas og røgelse, campari, urtebolsje og blodappelsin.
