Riecine TreSette Merlot IGT 2018

The TreSette wine is the result of a meticulous and loving process that starts already in the vineyard.

The grapes are carefully selected, first in the field and then on a vibrating sorting table. They are de-stemmed, but not crushed, before being gently transferred to French oak casks from Grenier.

In the first days, the grapes are kept at a controlled temperature, aided by coolers and dry ice to promote cryomaceration, a process where the cold helps to extract the finest aromas and flavors.

Gentle pressing of the grape skins is done a few times a day to ensure a gentle extraction.

When the alcoholic fermentation starts spontaneously without the addition of yeast cells, the cooling is switched off. On the second day of fermentation, a so-called délestage is carried out, where the liquid is separated from the skins for over 12 hours, which maximizes the extraction of color and tannins.

The must is then vigorously pumped over to oxygenate the mass completely and break the "grape cap".

After that, overpumping is carried out daily every morning and decompression every evening.

After the end of the alcoholic fermentation, the wine continues with a further five days of maceration, after which it is carefully transferred to 700-litre tonneaux.

The TreSette wine is aged here for 20 months, which adds depth and complexity to the character of the wine.

After this period, the wine is moved to cement and stabilized here for a further 3 months before the final bottling.

The result is a wine that combines traditional craftsmanship with modern vinification techniques.
