This Riesling has a delicate residual sweetness that plays off a very high, fresh acidity and a firm minerality, and it is precisely this interplay that makes it both versatile and crisp on the tongue. The sweetness tames chili and salt, while the acidity cuts through richness and freshens things up, so it fares beautifully with spicy Asian cuisine and with salty charcuterie. For dessert it is best alongside fresh fruit and creamy, citrus-bright dishes, where the acidity keeps the sweetness from being overwhelmed. Exciting interplay between sweetness and acidity. The delicate natural residual sweetness is a nice counterpoint to the violently high acidity that is typical for Riesling.
Mineral-rich subsoil from the volcanic rock on the southernmost tip of the Kaiserstuhl, the Ihringer Winklerberg.
A light, mineral and firm Riesling, very atypical for the sunny and warm Kaiserstuhl!
It is definitely a riesling with maturation potential.
