This Bordeaux blend from Tuscany has ripe, velvety tannins, moderate acidity and a warm, dense body with notes of black cherry, blackcurrant and chocolate. The ripe tannin and the 14 percent alcohol call for protein-rich, fatty dishes, where the fat softens the tannins and creates a smooth mouthfeel, while the wine's fruit plays up to grilled and long-braised meat. Aged cheeses and fatty charcuterie meet the wine's structure, and the herbal, roasted notes suit beef and game. Also try a dollop of mustard or a little pickled vegetables, which lift and freshen up between the fatty bites.

About the wine
Hand-harvested in September
Natural fermentation in stainless steel tanks. Separate vinification of Merlot, Cabernet Sauvignon, and Cabernet Franc.
Aged on the lees in Burgundy barriques for at least 18 months, with a maximum of 10% new wood.
The blend is adjusted each year based on the yield of the vineyards.
Bottling occurs at the earliest 2 years after harvest, without any filtration.
Limited addition of sulfites.
The aroma is seductive with hints of black cherries and blackcurrants, followed by chocolate and roasted notes with vegetal and herbal nuances.
The taste is lavish and dense, energetic in tannin texture, warm and consistent, and delightfully persistent.
