This white wine is crisp, fresh and yet full-bodied with plenty of acidity from the slate-clad vineyards up in the heights. The high acidity cuts through richness and the salt in fish and shellfish, while the depth and density in the flavor mean it can keep pace with dishes that have a bit more body and aromatics. Use it with oily fish, shellfish and fresh goat cheese dishes, where the acidity cleanses the palate, and try it also with lightly spiced dishes, where the freshness cools the heat down without drowning out the food.

The Wine Advocate
The very approachable young red 2021 Lalama has notes of wild berries, flowers and herbs that talk about the Mencía grape (it has 15% other varieties) and the dramatic conditions of the Ribeira Sacra vineyards, with a honeyed twist.

Vinous
Medium-bodied and creamy, with vibrant acidity, it tapers off with notes of fennel and oregano. The 2021 is energetic, flavorful and creamy, with a hint of subtle oak on the finish.

It is a flinty and very delicate wine. It has a deep salinity and is very savoury. It clearly has a mineral expression and will grow in the bottle.
