This is a quite unusual red wine without tannins, with low alcohol and a high, fresh acidity, so it behaves almost like a light red wine or a robust rosé when it comes to food. Because there is no tannin to lean on, it's the acidity that does the work, and it cuts beautifully through fat and oil in light dishes rather than having to match heavy, fatty cuts of meat. Serve it lightly chilled, and stick to delicate proteins, boiled and steamed preparations and dishes with a slightly tart edge, so that wine and food become equal partners. Avoid the heavy, braised meat dishes, which would run away from its light body.
