Brunello from Sangiovese has a core of firm structure, fresh acidity and moderate, ripe tannins, and it points straight toward Tuscan pot dishes and juicy meat prepared in a robust manner. The tannins are softened by the fat and the proteins in braised beef and lamb, while the balanced acidity cuts through rich sauces and keeps the palate fresh. This vintage is from young vines and seems a touch lighter than the truly great Cerbaiona wines, so choose dishes with depth, but without overly wild spicing. Serve it ideally at 17 to 18 degrees, so the tannins feel velvety smooth rather than tight.

About the wine
Fermentation at 26 degrees in upright oak barrels (first used for the 2016 vintage). At Cerbaiona, all the old barrels have been replaced with new ones, and the 2017 must has spent 2 years in 17 hl and 15 hl barrels, 50% completely new and 50% used once before.
The wine was bottled in April 2020, which is somewhat earlier than usual. Thus, the wine has now been in the bottle for 2 years.
The wine is from young vines, and it is not a wine that has the legendary longevity that Cerbaiona has always been known for.
