As a Blanc de Blancs of 100% Chardonnay from the Côte des Blancs, this Champagne has high acidity, fine, persistent bubbles and a pronounced minerality with citrus and green apples. Bubbles and acidity cut through salt and richness and cleanse the palate between each bite, so the classic route is raw and steamed shellfish and sushi, where the freshness plays with the oceanic notes. The elegant, cool style also suits delicate, herb-refreshed dishes and creamy cheeses, where the acidity balances the richness without feeling heavy. Keep the accompaniments discreetly spiced, so the wine's finesse has room to unfold.

About the wine
This cuvée is a Champagne Blanc de Blancs, meaning Champagne made from 100% Chardonnay.
The grapes come from 20 to 25-year-old vines in Côte des Blancs. A cuvée with elegance and finesse.
Generous aroma with notes of chalk, sea, citrus, and green herbs. Lots of complexity in the taste. The primary hints of minerality are nicely complemented by citrus and Granny Smith apples. Finely structured and remarkably persistent in taste with a lovely long-lasting finish.

A mouthwatering Champagne, with chalky definition and good depth to its flavors of juicy quince paste, poached pear, blood orange peel, blanched almond, biscuit and pickled ginger. This shows zesty drive on the racy finish.
