This blend from Tenerife's volcanic soil is fresh and lively with tropical fruit, citrus and white flowers, carried by a distinct saline minerality and a lightly smoky touch. The fresh acidity and the lingering mineral finish make it perfect for fish and shellfish, where it lifts the salty notes and cuts through light richness. Vijariego Blanco's short barrel aging with bâtonnage adds a bit of extra body, so the wine can also accompany grilled vegetables and Mediterranean-style dishes without being overpowered. The aromatic intensity pairs nicely with dishes featuring herbs and citrus, while the wine's energy keeps the freshness alive.

About the wine

Ensamblaje Blanco gathers several of Tenerife's local green grape varieties into one wine to showcase the breadth and character of the island's volcanic terroir. The blend varies from year to year depending on the harvest, but typically consists of gual, marmajuelo, vijariego blanco, malvasía aromática, and verdello—all grown on their own roots across the northwestern part of the island.

The aroma is open and lively with tropical fruit, citrus, and white flowers, with a distinct mineral and slightly smoky tone. The taste is fresh and balanced with good energy, beautiful depth, and a persistent mineral finish, which brings all the elements together beautifully.

It is an ideal wine for fish and seafood, grilled vegetables, or dishes with a Mediterranean touch, where both the freshness and the salty minerality truly come into their own.

The grapes come from vineyards spread across the northwestern part of Tenerife, from sea level up to 1,000 meters in elevation. The soil varies between younger volcanic deposits with sand and stone and older eroded volcanic massifs rich in minerals. Each grape variety is cultivated where it thrives best, and all vineyards are managed sustainably without the use of synthetic pesticides or herbicides.

  • The grapes are hand-harvested and transported in small crates to the cellar. Upon arrival, they are cooled to preserve freshness and avoid oxidation. Each variety is vinified separately using the grapes' own yeasts. Some are fermented in stainless steel tanks and concrete tanks, while vijariego blanco ages for four to six months in French oak barrels with bâtonnage (stirring of the lees during maturation). Before bottling, the individual components are assembled into the final blend. Production is limited to under 4,000 numbered bottles per vintage.

Ugens Vin
@ugensvin
Drikker du det samme? Chardonnay. Riesling. Sauvignon Blanc. Gentag.
