Domaine Jérôme Chézeaux is located in the heart of Burgundy, near the border between Prémeaux-Prissey and Nuits-Saint-Georges in Côte d’Or. It is here that Jérôme gently continues his family's traditions in a series of small parcels, many of which were planted by his grandparents over 70 years ago.
The vineyards cover only 2.8 hectares but are filled with old vines and personal history. In 2017, the area officially became part of the geographically defined appellation Bourgogne Côte d’Or – a classification that is above generic Bourgogne and reserved for pinot noir and chardonnay grown under strict yield regulations.
The soil is classic Côte d’Or limestone with elements of clay and sand, giving the wines an exciting combination of structure and freshness. It is precisely this geological complexity that Jérôme seeks to highlight in his wines: they should be elegant, precise, and true to their origin. Cultivation is carried out with respect for nature according to lutte raisonnée principles, and everything is harvested by hand.
In the cellar, Jérôme works with great precision and care. The grapes are completely destemmed and typically undergo a cold maceration for 3–4 days to extract color and aromas without drawing too much tannin. Fermentation occurs exclusively with naturally occurring yeast and often lasts up to four weeks. Subsequently, the wines are matured in small oak barrels – about 30% new – for up to 24 months, and they are bottled without filtration.
Production is extremely limited, and yields are consistently kept low, often below the permitted limits. This means that wines from Jérôme Chézeaux are not only rare but also markedly concentrated and precise in expression.
Jérôme Chézeaux does not make wine to impress with volume or opulence – but to achieve an honest, classic Burgundy style where the terroir is allowed to speak.
