This Pinot Noir is medium-bodied with moderate tannins and a fresh, lively acidity, and it thrives best in the company of dishes that have finesse rather than weight. The fresh acidity cuts elegantly through richness and lifts poultry, mushrooms and aged cheese alike, while the soft tannins are met beautifully by light game and the delicate fat in confit and pâté. The wine's earthy, umami-tinged tone plays wonderfully against mushrooms and truffle, and a light roasting or braising matches its medium body nicely without overpowering it.

About the wine

Nuits-Saint-Georges Aux Boudots 1er Cru is located in the "Zone Vosnoise" or the northern end of Nuits-Saint-Georges, just below Les Damodes. It borders Vosne-Romanée Aux Malconsorts 1er directly to the north. Its position lower on the slope with deep soil full of small stones results in a richer and fuller wine. The grapes are selected, and cold maceration usually lasts only a day or two. The alcoholic fermentation is spontaneous, and malolactic fermentation occurs in barrels. Depending on the vintage, the proportion of new oak is around 30-35% for the premier crus.

This high-toned red features black currant, blackberry, licorice, iron and tobacco aromas and flavors. There are elements of sandalwood and toasty oak as this winds down on the finish. This is deceptive in its subtlety, yet stretches out in the end. Best from 2029 through 2047.
