This wine has a silky-smooth texture, fresh acidity and a moderate, ripe tannin reminiscent of classic Burgundy, and which therefore thrives best with dishes that have a little richness and depth without being heavy. The mineral, lightly smoky core and the fine red fruit suit game and lamb, where the moderate tannin is met by the meat's juiciness and becomes even softer. Earthy, mature cheeses and spicy charcuterie play up against the wine's terroir character and prolong the tasting experience. Serve it at 17-18 degrees, so the tannins appear round rather than tight.

About the wine

75% mencía, 20% brancellao, and 5% mouratón and sousón from vines that are from 61 up to 111 years old, and which stand at 300 - 700 meters altitude.

Each parcel is harvested and vinified separately. Natural malolactic fermentation in open 500L used oak barrels. Then fermentation in 300L used oak barrels. Transferred to aging in used French barriques for at least 24 months. Then aged for 6 months in large French oak barrels, at 15 hl before bottling. Finally, the wine is stabilized for a minimum of 16 months in the bottle before release.

A meditation wine that is incredibly pleasant while challenging the senses through extraordinary complexity, purity, and fine flavor details. The structure almost resembles classic Burgundy, but with a fruit density that can only come from this unique terroir.

A wine that will only get even better in the coming years.

I love the decadent and ripe nose of the 2019 Lacima, which contrasts with the moderate 13.5% alcohol that gives it a more austere palate. With time in the glass, it opens up to floral aromas, hints of herbs and wet slate. The tactile sensation is fantastic, with powdery minerality and a dry finish. It's a very serious vintage of Lacima.
