75% mencía, 20% brancellao, and 5% mouratón and sousón from vines that range from 62 to 111 years old, located at altitudes of 300 to 700 meters. 

Each parcel is harvested and vinified separately. Natural malolactic fermentation in open 500L used oak barrels. Subsequent fermentation in 300L used oak barrels. Transferred to aging in used French barriques for at least 24 months. Then aged for 6 months in large French oak barrels, 15 hl, before bottling. Finally, the wine is stabilized for a minimum of 16 months in the bottle before release.
