On the nose, you are met with a delicate aroma of white flowers, citrus, and subtle notes of ripe pear, complemented by a clear and chalky minerality.
The taste is full-bodied and harmonious, with nuances of yellow fruits, butter, and a discreet freshness that unfolds into a long and precise finish marked by the characteristic minerality of the terroir.
It pairs beautifully with dishes like baked cod, chicken in cream sauce, or simple cheeses like Comté.
With an aging potential of up to 5 years, the wine will only become deeper and more complex over time.
Serve the wine without excessive chilling—around 10 degrees—so its complexity and freshness are fully appreciated.
The grapes come from a small parcel of just 0.1 ha, where the 16-year-old vines grow on a chalky and clay-rich substrate, contributing to the wine's cool elegance. The vines are cultivated with great care, where plowing, leaf removal, and manual harvesting ensure optimal quality. After pressing, the must is lightly clarified and naturally fermented in 350-liter oak barrels. The malolactic fermentation takes place in the winter in cool underground cellars, giving the wine a creamy structure and harmonious acidity.
