This is a classic Burgundy with medium body, fresh acidity and fine, discreet tannins wrapped in plenty of red fruits and cherry with a hint of licorice. You should stick to dishes in the same light to medium-bodied range, so the wine isn't run over, and let its earthy terroir play up against earthy flavors like mushrooms and truffle. The fresh acidity and the soft tannins make it flexible for everything from poultry to aged cheeses, where the richness rounds off the tannins, while the acidity keeps the palate fresh. Feel free to choose lighter cooking methods such as braising or roasting, which preserve the finesse rather than drowning it out.

About the wine

The Clos Faubard field is situated high on the mountainside, on a terrace, with fantastic sun exposure all day long. The soil is limestone covered with a thin layer of red loam. 0.7 hp. for approx. 300 meters high.

The grapes are pressed, and the must is lightly clarified before it reaches the barrel. Fermentation is achieved with natural yeast. The malolactic fermentation is typically completed during the winter months, in the underground cellars.

Aged in used 350 liter casks for 10 months.

The color is a beautiful burgundy red. The aroma is lots of red fruits and berries, especially cherries, with notes of licorice.

The taste is wildly aromatic. Lots of red fruits wrapped in fine, discreet tannins. Beautiful rich balance.

The quality/price is really nice.
