This Auslese from the Mosel thrives on the balance between sweetness and fresh acidity, and that balance is the key to the table. The sweetness tames salt and strength, so the wine becomes a classic counterpart to powerful blue cheeses and piquant washed-rind cheeses, where the tart freshness simultaneously cuts through the richness. The ripe peach, apricot and citrus notes mirror full-bodied fruit tarts and creamy desserts, and the off-dry character with high acidity also makes it elegant with lightly spiced Asian food, where the sweetness cools chili and fish sauce. Serve preferably in large glasses, so the aromas of honey and white flowers have room to unfold.
