Catarratto with a very special Etna elegance.
100% catarratto from Contrada Volpare near Milo on Etna's eastern slope. The vines grow on small terraces at about 700 meters altitude in sandy, volcanic soil, rich in minerals and organic material.
Milo is primarily associated with carricante, so catarratto is a somewhat unusual sight in this part of Etna. The high altitude and cooler climate on the eastern side give the grape a special freshness and elegance, balancing catarratto's natural fullness and aromatic character.
The wine has an intense and fresh aroma of green apples, citrus, and white flowers with fine herbal nuances. The taste is round and concentrated, yet lively and elegant with fresh acidity and a distinct salty, mineral character. The finish offers citrus, herbs, and a lightly spicy touch.
The grapes are harvested manually around mid-October and undergo three hours of cryomaceration followed by direct pressing. The must is clarified at low temperature and fermented in steel tanks, where the wine subsequently ages for four months on the lees.
An exciting interpretation of catarratto, where the altitude and Etna's volcanic terroir give the grape both minerality, freshness, and beautiful elegance.
