About the wine
Riecine di Riecine, comes from the oldest vines on the property, the same ones that John and Palmina discovered upon their arrival in Tuscany.
The grapes go through a careful selection. Some of the grapes are de-stemmed, while others are left as whole bunches before being carefully transferred to the cement tank.
The grapes undergo an initial cryomaceration where dry ice keeps the temperature down before the fermentation process slowly begins to develop over the next 15 to 20 days. When fermentation is complete, the tank is filled to the brim to avoid excessive oxidation, and the wine is allowed to rest on its skins for another 30 days.
After this period, the wine is transferred to the egg-shaped cement tank, where it matures for 36 months. This is followed by a further aging of three months in ordinary cement tanks to achieve stabilization and natural clarification before bottling.
The bottles are then moved to a maturation area, far from sunlight and temperature fluctuations, where they mature for another six months before being released.
