This is a mighty and powerful red wine with pronounced tannins, a full body, and a whole 16% alcohol, so it will want food of corresponding strength and richness on the plate. The tannins are softened by fatty proteins, while the wine's mineral and lightly smoky character suits grilled and slow-roasted meat. Stick to robust preparations like grilling and braising, and feel free to let a mature hard cheese round off the meal, since the cheese tempers the tightness of the tannins.

About the wine
Another single field pig.
Macchie are two small fields located 480 meters above sea level. Total area is 3.3 ha. The soil is lime and limestone.
The fields face south and east. Giampaolo uses only the south-facing part (1 ha) for this wine, and it yields 1,515 bottles.
The vines were planted in 1997. 3 years of maturation in a 12.5 hl Garbelotto cask followed by 18 months in bottle.
