This cabernet has a dense, structured body with ripe tannins and lively acidity, which makes it an obvious partner for fatty, hearty meat. The tannins are softened by animal fat, while the acidity cuts through the richness and keeps the mouth fresh, so you get the most out of both wine and food when both have fullness and strength. The dark fruit notes of blackcurrant and blackberry, along with hints of coffee and licorice, match grilled and braised dishes with deep flavor, while a mature hard cheese meets the tannins without pinching them. Choose robust preparations like roasting and braising over delicate, lean dishes, where the wine easily comes to dominate.

About the wine

This impressive Cabernet Sauvignon is crafted from the finest grapes from five selected parcels on the estate and proudly bears the house's name. The wine expresses the essence of Salento, where the character of the international grape meets the area's warmth and light, resulting in a wine with both strength and finesse.

In the glass, the wine shines with a deep, dark red color, and the aroma opens with intense notes of sun-ripened blackcurrants, blackberries, and cherries, beautifully combined with hints of cedar, cocoa, and spices from maturation in French oak barrels from Allier, Tronçais, and Fontainebleau.

On the palate, the wine unfolds with a dense and structured body, where the ripe tannins are balanced by a lively acidity, giving the wine a remarkable freshness despite its powerful expression. The taste is long and persistent with notes of dark fruit, roasted coffee beans, and a hint of licorice in the finish.

The harvest takes place at the end of September, and vinification is completed with meticulous barrel aging, beginning in January of the following year. The vintage displays a beautiful balance between fullness, acidity, and complexity.

This Cabernet Sauvignon is an ideal choice for elegant meat dishes like entrecôte, game, or braised dishes with rich sauce. It can be enjoyed now but will develop even greater depth with a few years of aging.
