This alpine chardonnay is unoaked and pure, with precise acidity, a light body and a pronounced salty minerality. It is built for dishes with richness and creaminess, where the acidity cuts through the fat and the salt plays off buttery and cheesy sauces. At the same time, it has elegance enough for white meat and mature cheeses without being drowned out, while the tropical and citrusy notes lift fresh herbs and poultry.

About the wine

Cool, mineral-driven Chardonnay with a distinct alpine character—unadulterated by oak and a pure expression of the mountains' influence.

The grapes are grown on terraced slopes at altitudes of up to 800 meters around Aymavilles and Saint Christophe. The alpine climate, with its cold nights and windy summers, lends the wine its noticeable freshness and elegant minerality.

The wine opens with delicate floral notes and tropical fruit/citrus. The taste is smooth and rounded with light body and plenty of fruit. It's balanced by precise acidity and a notable salinity with a fine mineral finish.

Serve it cool in generous glasses. It's excellent as an aperitif.

The wine is made from 100% Chardonnay, hand-picked in the second half of September. The soil is moraine-dominated with over 50% sand and granite beneath. This combination enhances the wine's cool character. The first vintage was in 1991.

The grapes are gently pressed as whole clusters, after which the must ferments in steel at low temperatures for 12 days. After fermentation is complete, the wine rests on the lees for three months before bottling—a method that imparts both roundness and texture without overwhelming the wine's natural purity.
