This orange-style white wine, made from Trebbiano and Malvasia, is fermented and macerated for a long time in terracotta, giving you both fresh acidity, a distinct salty and slightly bitter edge, and a meaty, umami-driven body. The acidity and the light bitterness cut through richness and oil, while the salty, spiced profile loves dishes with brine, herbs, and a little chili. Choose food with salt, acidity, and olive oil rather than heavy cream sauces, and let the wine's freshness cleanse the palate between bites.

About the wine

The grapes ferment spontaneously in terracotta amphorae in the coldest part of the cellar. The choice of terracotta is made to enhance the effect of the maceration the wine undergoes and to create the best conditions for the living product.

The subsoil is characterized by ancient river deposits, and the soil here is filled with stones and rocks from galestro to alberese and granite.

The grapes were harvested in the last week of September.

Fermentation and maceration for 9 months in terracotta jars. The wine is then placed for 7 months in concrete to allow it to decant naturally and is then bottled without sulfites.

The color is wonderfully golden.

Various impressions of sweetness, saltiness, bitterness, and acidity make the wine rich and fleshy, very tasty, and deliciously spicy.

The taste is voluminous like umami and at the same time fresh and fruity - a truly lovely balance.

 

Critic reviews

Shiny orange with golden reflections. Slightly reductive on the nose, then ripe apple, chamomile tea and dried apricots. Noticeable, lively tannins on the palate, with a fine saltiness and delicate acidity, ideal as a food wine.
